Simona from La Latteria (artisan Italian cheese)
La Latteria was started by Simona di Vietri, a native Southern Italian living in London and missing the best mozzarella from home, so she decided to start making it here! She now creates the very finest, artisan Italian cheeses in Acton with Buffalo milk from Oxfordshire. Simona’s cheese is so good she was visited by Stanley Tucci for his Searching for Italy TV show and you last year, her wonderful stracciatella starred on our delicious English Caprese’ dish.
Gary and Jenny from Nutbourne Nurseries (incredible tomatoes)
The beautiful rural village of Nutbourne in West Sussex hides one of the UK’s top tomato suppliers, Nutbourne Nurseries. Gary Griffiths has been growing tomatoes for over 40 years alongside his wife Jenny. They now grow more than 25 varieties and all bursting with incredible flavour. We barbecue their mini San Marzano tomatoes until blistered, which concentrates their sugars and brings out their sweetness, and serve with Simona’s stracciatella.
Hugo from ChalkStream Foods (the finest rainbow trout)
The rainbow trout used on our menu is a unique product, grown alongside the world-famous River Test chalk stream river in Romsey, Hampshire, by Hugo and his team from ChalkStream Foods. Slow-grown for two years in his sustainable farm using fast-flowing, crystal clear, pure chalk stream water, their trout are fit and lean, with a unique, clean taste. We barbecue the trout on maple wood which add a mild sweet flavour.
